Thank you so much for purchasing a ticket for the virtually guided cooking class with Sapna -  "Samosa Pie and Masala Chai"

To ensure we maximize our time during class, please gather the ingredients and any equipment and tools for the class before hand. 

Recipes will be emailed to your inbox 48 hours before class so you can print them and have it ready. If you have ordered an optional spice kit as an add-on, it is on its way to you. The list for groceries and equipment is given to help you purchase any items that are not available in your kitchen.

MANGO AND CILANTRO CHUTNEY

GROCERY LIST for Samosa Pie + Masala Chai + Mango and Cilantro Chutney

Pantry Staples

  • All purpose flour: 2 cups 

  • Whole wheat flour: 2 cups

  • Oil of choice

  • Loose Indian Black Tea preferably Assam or Darjeeling.  The Indian brands I prefer are Society Tea or Red Label.

  • Sugar for tea

Vegetables and Fruits

  • Potatoes: about 3-4 medium size potatoes ( about 1.25 lb)

  • Frozen Peas 

  • Fresh Cilantro: 2 bunches total 

  • Fresh Mint: 1 bunch 

  • Mango: 1 (you can get ripe or slightly unripe will also do)

  • Lemons: 2 pc

  • Green Chilies: 2-3 pc any variety as per preference. You can skip them if you can't tolerate heat. 

  • Fresh Ginger Knob: 1/2 inch piece is plenty

Dairy 

  • Whole milk is preferred for making chai but you can use low fat version as per your preference or even a plant based alternative. I will be using whole milk during class. 

  • 1 stick of unsalted butter or vegan butter or vegetable oil as alternatives. I will be using unsalted butter in class. 

Spices: No more than a tablespoon of any spice will be needed. 

  • Whole Cumin Seeds 

  • Coriander Seeds

  • Fennel Seeds 

  • Green Cardamom pods: only 2

  • Carom Seeds or Ajwain 

  • Turmeric powder 

  • Roasted cumin seed powder 

  • Dry mango powder (optional)

  • Garam masala 

  • Whole Black peppercorn: 9 

  • Red Chilli powder: any variety you may have on hand

  • Sea Salt 

  • Pink Himalayan Salt  

*Ingredients listed in red and bold are part of the spice kit. If you have ordered the spice kit, you don't have to worry about finding those ingredients for class. 

EQUIPMENT AND TOOLS FOR CLASS

 

FOR SAMOSA PIE​

  • 9.5 in pie pan 

  • Frying Pan 

  • Mixing Bowl to knead the dough 

  • Rolling Pin 

  • Medium Pot to boil the potatoes

  • Chopping Board + Knife 

  • Mortar and Pestle 

 

FOR MASALA CHAI 

  • 2 quart medium saucepan to cook the chai 

  • Mortar and Pestle 

  • Metal Strainer to strain the chai 

  • Tea cups 

FOR MANGO AND CILANTRO CHUTNEY 

  • Blender 

  • Chopping Board + knife 

  • Pairing Knife to peel the mango 

  • Mixing bowl to wash the cilantro
